The funnest day I have had in a long time...



So about 2 weeks ago, me and my family were in dire straits. We had all been going 100 mph in different directions (work, vacations, camps, etc..). It was BAD! I hadn't cleaned my house for weeks because I was never home long enough to clean or even unpack from our last adventure. I had mountains of laundry (seriously, mountains) and my husband was an exhausted overworked mess. He said to me one night, "Can we just be done? Can we just stay home and not go anywhere for a few hours, maybe days?" Let me just say, he wasn't really asking-he was insisting that we slow down. I had also been feeling that we needed a break so I readily agreed that we were not going to plan anything else for the rest of the summer. Well, the the next day, my co-worker (who I love) asked if Todd and I wanted to go to Zion's National Park with them and do the Subway hike. If you aren't familar, it is a day hike that is limited to 80 people a day, so you have to have a permit several months in advance. Tough even to get a permit. So, of course, I immediately said yes and then realized I was going to have to try to convince Todd that it was worth a 5 hour drive on his only 2 days off in like 8 days. I told myself that even if he didn't want to go I would go by myself with my friends because I LOVE hiking and this seemed like as good a time as any. I held my breath after I asked him if he would go and as luck would have it, he loves hiking also and maybe was prompted to say that we could go. WE NEEDED THIS WEEKEND!! It was so much fun and quite the adventure. You may get bored.. but I have to record our story because someday I will forget all the silly, unbelievable details.

So to make our hike, we had to leave friday night. Todd had to work until 6:00 p.m. Yes, that is right. We had been so busy that we hadn't packed anything yet and had to get ready for the hike that night, pick up Jodi and Jantzen, load the car, arrange kids with Maddie (our dream come true), and head down south. We finally pulled away from SLC about 7:30 p.m. All was going well until about 9:00 ish. My friend, Jenni, who was also traveling down about the same time called me and informed me that they were having car problems and they didn't know if they should keep driving their car. I would have been so sad if she missed this hike that we were all looking forward to. We told them we would wait for them in Fillmore and then follow them, so if they broke down, we would be available to help. So at 10:00 p.m., we meet at Fillmore and discuss what is going to happen. We had no options.. They didn't feel like it would be a smart idea to drive the car any farther. It was too late to get a rental. We did not want to go without them, so we unloaded our Suburban and they unloaded their gear (4 persons in their car) and we proceeded to reload with bags on top fastened with bungees we bought at the Maverick. It took us awhile to get everything secured and all 8 people squished back in the car. I knew my husband would make it happen. It was a comical situation. Not once did anyone complain even though I know it must have been HE.. for the people in the back stuffed amongst all the gear for the hike.

About 11:30 p.m. we are on the road again, determined to make good time and be able to get a few hours of sleep before our early wake up call the next morning. Then at 11:35 ish or so we thought a bag fell off the top. Stopped, checked the bags, resecured them, carried on. Drove until about 11:41 p.m. then sound was heard like a bag being dragged along the freeway at 80 mph. Stopped, checked.. sure enough, a backpack (my backpack) was dragging along the road, still hooked somehow to the top rack. So after readjusting, we were on the road again at 11:45 p.m.

I would not be exaggerating if I said we stopped at least 4 more times because we thought bags came off. Then, right as we were getting close to our destination, it happened! A voice from the back of the suburban squeeked..."I think I heard something fall off the top!" We stopped and checked..yes, says Todd, something is missing. There is a hole in his wonderful pack job and a bag is gone.. HOLY FREAK!! Are you kidding me?? It's like 1:00 a.m. by now and we don't know at what point we lost the bag. So, we turn around and peer into the darkness. After driving a mere 100 yards or so, we spot a pink duffle laying off to the right side of the road..my other bag. It looked as if it had been hit by a car or dragged along the road, but otherwise all my belongings inside were unscathed. By this point we were all a bit delirious with the hilarity of our trip. BUT THE BEST WAS YET TO COME....

About at this point, another voice from the back of the suburban squeeks..."are you guys following a map with directions?" I was literally a bit offended. What did they think I was some idiot person driving to some remote place I had never been in the middle of the night, sleep-deprived? So I said, "Yes, we have a map with directions." and that is all I said. I was confident we were going the right way. Well, again, Stacy was mistaken. It wasn't until we had actually left Zion's National Park boundaries that the little voice in the back said ..."mmm.. I don't think we are going the right way.." We stopped, I showed him the map. He showed me where we were and where we were supposed to be. OH MY FREAKIN FREAK!! It was about 2:30 in the morning and I had just added another hour onto our trip. Oh ya.. I was so popular. Actually, no one even got mad, we just had to chuckle or we might have gone insane. So we finally pulled in to our "campsite" about 3:30 a.m. and threw out our sleeping bags and went to sleep about 4:00a.m.

When we awoke at 7 a.m. we realized that our "campsite" was nothing more than a gravel pit in a burned out part of the park. For real, we slept in a gravel parking lot. It was so par for the course for our trip thus far that we all just laughed.

We packed up and actually started hiking about 8:30 a.m. And it was seriously so awesome. The group we went with was so fun--we laughed the entire time. Despite the way the trip down went, there was no problems or serious injuries on the hike. Todd and I would have done it again the next day if we could have. The whole weekend was the best...even the drive down because it was so unreal. It just made the weekend even more unforgetable.

The trail down into the subway slot canyon is the rocks behind Clay who is in the background of the picture.  It was really fun coming down into the canyon, kinda steep, but really fun.


I am not sure why I posed this way--could be a felt victorious and brave because I had made it down into the canyon without killing myself.  This was the first water in the slot...much more to come.

Could this truly be my life??


This was Sadie Grace's outfit for 1st day of school. Of course, like most women, she couldn't decide what to put on and finally decided on the naked helmet look that is always fashionable.

Tanner had 2 first days of school. The first first day was the fake first day with only 7th graders and only 1/2 day. The second picture is the real first day, which is why he brought out the cool baggy athletic look. The ladies are all about the jocks, you know.




Wow.. I am the mother of a high schooler! Not just that, but I am also the mother of a junior higher!! But even better, I am also the mother of a preschooler. Hmm, and do not forget..I still have one at home. Yes, my life is a fantasy land. I just recently realized that when Maddie starts College, Sadie will be starting Kindergarten. Oh how the heavens must laugh at my follies.

I have officially turned into one of those freakish old people who tell everyone they talk to that "life goes so fast" and "they were babies two days ago" and "fiber choice tablets work much better than metamucil"(BY THE WAY, IT IS TRUE). Truly I am astounded that Maddie is starting high school and I get a bit sick to my stomach to realize that in a few short years, she will be gone... I can't take it, I really can't.

I am truly blessed to have the full spectrum of motherhood in my house right now. It does make you appreciate each age a bit more. I look at Sadie and realize that she is my baby and she will be Maddie's age before I know it. I look at Maddie and realize I have to enjoy every second of the next few years because a few weeks ago, she was Sadie's size and learning how to go pee-pee in the big girl potty--now, she's learning to operate a very large automobile! FREAKISH! I look at Luke and know that soon he will be receiving texts from girls and I look at Tanner and remember what a fun little imp he was as we were learning his letters and shapes (he is still fun, I just wouldn't call him an imp anymore..) I could just cry...OK, I am crying. I am a blessed mother and despite all of the chaos that is my life right now, I want to savor each second. I want to smile as I teach my 15 year old how to drive and then come home and giggle when my 2 year old tries to wipe my 3 year old's bum after he poops (really happened.. so so awesome). I laughed out loud for a long time last night as my 15 year old taught my 13 year old the art of courting a girl via texting. I am grateful for this awareness that I have. I hope I can maintain it in the freakishly loud, busy, sleep-deprived days ahead.

THE BEST $130 I EVER SPENT

At this point I don't think they understood one word of the instruction. Cole told me he not only forgot how to talk, but he almost forgot how to walk.

Cute little buddies aren't afraid to show their love and concern for each other. For real though, I think Tanner was worried Cole was going to pass out and die before they even did the ride.Grab 'hold and hang on! If only I had a video of the "Post Bungie" swagger..








So I took the kids to Lagoon. I don't care what anybody says.. I can have a great time there. The day was part of an early birthday present for Tanner who will be 13 in a few days. So we took his cousin (and best friend) Cole and Emma today, along with Chantelle, another cousin. I have tried to talk my kids into doing the skycoaster (bungie drop, swing) or the catapult (shoots you in the air at like 400 mph, the most horrendous thing ever). I have done both and I thought it would be very entertaining to see my kids do either or both. So every time we go I put up the old bribe..."I'll give you 50 dollars if you _____________." Today I told both Cole and Tanner that I would pay them both 50 dollars if they would do the swing. Now you must realize that I am not made of money--I NEVER THOUGHT THAT THEY WOULD DO IT!!! I mean, Tanner is the kid who every year we make him cry by forcing him to go on a ride. Last year, he was TICKED and HUMILIATED because he cried in front of Cole's family because I was going to make him do Wicked. The year before that, we made him do the Rocket. The year before that we made him do the Tower of Terror... Just last month, he about messed his shorts going on the roller coaster in Primm. Don't judge me.. he is always glad he has gone on the ride (or he is just ecstatic to be off the ride and alive). Anywho.. I was not going to force them and I only put up the 100 dollars because I knew they wouldn't do it. Well, momma was wrong!!! Here is the video to prove how wrong I was and now I am 100 dollars lighter. (Of course I paid up!)


(Cole was close to having a stress-induced seizure I am sure of it. I don't think in the video you can fully comprehend how scared they were. Some of the pictures capture the absolute shock and terror that they must have been feeling. Why is it that causing young men such fear brings me such happiness and joy?? Hmm.. I may need to be hospitalized and medicated because I think that is called anti-social behaviour...A padded room might be an enjoyable change...)

What an awesome activity this was. I am not sure if the Egans and Goudies had as much fun as our family did. There was alot of complaining coming from their bicycles!! Our family loved it so much. Great way to see the island and really fun to be all together. It is a bit dicey on some of the roads, but we were careful!!

This afternoon we went with Todd's family up to the mouth of Little Cottonwood Canyon to take the kids on a little "hike". It was more a leisurely stroll on a paved path, but we were still out in nature with bugs and heat and dirt. Even though it was like 110 degrees, it was still fun to see the place where the pioneers harvested (is that the word?) the temple granite. A-mazing!!

We were so hot after our meandering, that we went back to Gma and Gpas and the younger kids ran through the sprinklers and us olders watched "Funniest Home Videos" (tradition) and ate "Grandma popcorn" (recipe is butter and then a bit of popcorn). Love 'em...

Here are some of my favorite pictures of the afternoon. Just love Todd's family and our Sunday afternoon traditions that have started since we moved back from California. My kids get quite upset if they can't see Grandma and Grandpa and the cousins after church every sunday.

GOT ME SOME TANNER, FINALLY!


So happy to have my Tan Man home. So proud of the high camp adventurer he has become. He earned 5, almost 6 merit badges this last week-very productive. He came home happy, dirty and tired... just how we like our 13 year olds. He also came home with a very nice rainbow trout that we had for dinner last night. (Would have been awesome with some fried green tomatoes). Had to post a picture of him fileting it (or destroying it, if you will). I think the fish weighed about 3 pounds and we ended up with 1 fillet that weighed about 3 ounces. But is was so tasty!!

SUNDAY DINNER


Oh yeah, here it is!! This is what I had for dinner, so yummy!!


If you can't tell, it's diet coke, "muddy buddies" (best invention this century) and fried green tomatoes. Yes, there really is such a thing and I made it at 10:00 p.m. because it sounded good (still premenstrual). My recipe is as follows..


green tomatoe(s)- not tomatillos, unripe tomatoes (mine had just the beginning of pink tinge)
(I sliced mine fairly thin as you can see, but you can slice them thicker)
corn meal
salt & peppa
parmesan cheese (fresh grated would be super fantastico)

(mix last three ingredients together to dredge tomato in)


heat up olive oil in fry pan.. I did fairly high heat... dip slices of tomato in cornmeal mixture. Fry on each side, maybe 4-5 minutes (until a bit soft) longer if you cut them thicker.


I didn't have any ranch, but I am sure they would be good dipped in ranch. I ate mine with mozzerella cheese, so awesome.

Some other hints that I read about..
You can fry them in bacon grease. Seriously, you could fry an old shoe in bacon grease and it would be fabulous. You can use the dredge of egg, flour too. Go crazy, girls. I think you'll love them. I know I can use new recipes for tomatoes right now.
